Eddy Tseng is a Taiwanese national living in Cape Town, South Africa. Eddy is a qualified chef and sushi master and after training in Taiwan he moved to South Africa to continue his training as a sushi chef in some of the top listed restaurants in Johannesburg and Cape Town. Eddy opened his own restaurant in 2008 and had great success with his second restaurant Sake House Bar and Sushi Lounge. Eddy sold his restaurant in 2016.
Eddy is a brilliantly talented chef and a great teacher and has experience cooking in almost all Asian cuisines.

Hello Eddy, Thank you for this very clear video. I have a brand new bamboo steamer. I rewatched your video and realized I need to redo the initial curing process. My question is, how often would I need to refresh the curing process with the oil? Thank you!

Secret ingredient is turmeric - any store should have it in the herbs and spices section. 👍
Brought a bamboo steamer and after a few use it had mild .. I threw it away. ! I thought washing it with water and soap was enough
vinegar to wipe away mould - then make sure your steamer is completely dry before oiling it...
I was in japon months ago. Love thump shrimp. Thanks I am going to try to fix it

I think one cup of vinegar is too much. I did and it came sour
If you listen carefully Eddy says: ' 4 Parts rice to 1 part vinegar' - so that means 1/4 cup of vinegar to 1 cup of rice.

You can use another brand of mayonnaise.

You don't have to. You can use straight away.

But what if I don’t have rice vinegar? What is the alternative?
Apple cedar vinegar works well but you can replace with other vinegars even regular white vinegar. Some people have used lemon or lime juice as well but I've never tried, maybe it's also good? Just tread carefully, the ratio rice/vinegars is most important, maybe try a little less vinegar substitute when experimenting.

I followed every step but my sushi rice tastes and still smells like vinegar 😥 I used the ratio of 4 cups rice and 1 cup rice vinegar, and also added the salt and sugar.
Thats strange. Rice vinegar is usually quite mild.

Thank you! First time doing sushi rice and making sushi. I had to use a pot as I do not have a rice cooker... yet hehe. The measurements for sugar and vinegar were spot on! My sushi was a hit!! The leftover rice was even eaten just like that out the pot 😊❤ making more tonight and had to come re-watch your video because I need that perfect sushi again!
